Baking with kids

I absolutely love this recipe from BBC Food for Vanilla Cupcakes.  The are great to make with kids, quick and I have discovered you can add your own twist to them!

This recipe makes 12 small fairy cakes, or 9 larger cupcakes.

What you will need:

110g/4oz softened butter or margarine
110g/4oz caster sugar
2 free range eggs that have been lightly beaten
1 tsp vanilla extract
110g/4oz self raising flour
1-2 tbsp milk

I have found that its quicker to pre weigh all the ingredients if I am baking with my children.  They love that its all ready for them to put straight in the bowl and get mixing!

How to make them:

Preheat your oven to 180C/350F/Gas Mark 4 and line your muffin tin with cases (we used reusable silicon ones).

Cream the sugar and the butter together until they are pale, and then add the eggs in a little at a time and stir in the vanilla extract.

Fold in the flour, and then add a little milk at a time until the mix is of dropping consistency.

Now for the twist!

We’ve added smashed up Crunchie Bars to one batch we’ve made (we used six of the mini bars) and have also made a batch with Milky Way Stars (we used two handfuls of the stars).

I have added other ingredients to the mix in previous batches, such as a little dried fruit, and chocolate chunks.

Once you have added in your twist, stir and then evenly distribute between your cases until the are around half way full.

Bake in the oven for approximately 10-15 minutes, or until they are golden brown.
